Green Chicken Curry is a delicious and aromatic Thai dish that combines tender chicken with a rich and creamy green curry sauce. This dish is perfect for those who love a bit of spice and exotic flavours. Here's how you can make it at home in under an hour!

INGREDIENTS

2 tsp coriander seeds

1 tsp black pepper corns

3-5 fresh green chillies, seeded and chopped

1 cm piece ginger

3 tbsp chopped coriander leaves, roots and stems

2 large cloves garlic

3 tbsp chopped spring onions (green and white parts)

1 lemon grass root, roughly chopped

2 tbsp vegetable oil

400 ml coconut cream

850 g boneless chicken

1 small bunch fresh basil leaves

1 tbsp fish sauce

METHOD

  1. Grind coriander and peppercorns to a powder in a spice grinder or mortar.
  2. Add the fresh seasonings (chillies, ginger, coriander, garlic, spring onions and lemon grass) and grind to a paste.
  3. Fry this seasoning paste. in a medium saucepan with the vegetable oil for 3-4 minutes. Add the coconut cream and simmer for 10 minutes.
  4. Cut the chicken into 2 cm cubes. Add to the sauce with 1 cup water and simmer until the chicken is tender, about 20 minutes.
